Overnight Oats

As a continuation from my last post, I dabble in all sorts of kinds of eating.  Sometimes I eat vegan meals (though I'm not vegan), I definitely love eating Mediterranean style, and I am often trying to reduce the quantity of grains that I eat (though I'm not paleo either).  When I'm not fasting in the morning, I do enjoy overnight oats.  It is a big hearty breakfast that is super easy to prepare, can be vegan if desired, and is full of fibre!   I also love it because I prepare it in a mason jar and then can just pop it in my bag and eat it at work - without fussing in the morning.  This is the recipe I've been using most often, which a colleague (Dr. Shawna Darou, ND) tweeted a while back:

1/3 cup plain yogurt

1/2 cup rolled oats

2/3 cup "milk" (dairy or otherwise)

1 Tbsp chia seeds

1/2 tsp vanilla

2 Tbsp cocoa powder (I love chocolate!)

1/2 mashed banana

1 Tbsp natural peanut butter

Shake & leave in the fridge overnight for tomorrow's breakfast!
