Bircher Muesli - the OG overnight oats!

Organization and prep is key in my Toronto household if we want to stay on budget and eat healthy foods.  I meal prep most weeks for dinner, am hopeful that there will be leftovers for lunches (but I wasn't in luck today!), and try to have breakfast stuff on hand and sometimes even prepped ahead of time! One of my favourite breakfasts is a version on Bircher Muesli - what I consider the original overnight oats!  This recipe lasts us most of the week - and when I'm running to work it's easy to throw it in a container and bring it to eat for breakfast.  It's also easy to make gluten & dairy free if need be.


Bircher Muesli - adapted from a Bonnie Stern recipe.


2.5 cups oats (I use the organic sprouted oats from Costco)


2 cups frozen or fresh berries (again I buy them frozen at Costco)


1 apple, grated


3/4 cup orange juice (I just used extra almond milk last time I made this since I often don't have juice in the fridge)


1/2 cup milk (cow or any alternative will do here)


3/4 cup yogurt (if I don't have it on hand, I just use extra milk)


Mix all together and keep in the fridge overnight - then enjoy all week long!
